As an amateur baker, I have had too many baking misadventures that I have decided to keep things simple this CNY. I ran through dozens of CNY cookies recipes online, and this German Cookies recipe caught my eyes.

It is a 4 ingredients cookies recipe, and I have most of the components sitting in my kitchen pantry. You will need:
125g butter, softened at room temperature
40g icing sugar, sifted
125g potato starch/flour, sifted
80g plain flour, sifted
I use SCS butter, as I have some blocks sitting inside my fridge.

First of all, remember to preheat oven to 170°C and line your baking tray with greaseproof paper.
Then, using an electric mixer, beat the butter and icing sugar until light and fluffy.

It is very important to sift the flours to prevent any lumpy textures.

Add the potato starch and plain flour, and mix to form a soft dough. Your dough should look like this when it is ready.

The dough is a bit sticky, however it is not too difficult to roll into small balls (about 2-3cm diameter). Remember to press lightly with a fork to flatten and make indentation.

Bake in preheated oven for 15-17 mins (15 mins if you’re making 2cm ones and 17 mins for 3cm ones) on the upper rack. Some of m cookies turned brown because I forgot to remove them from the oven. Still delicious nonetheless. #selfpraise

Voila! German cookies that melt in your mouth for this joyous occasion. It is really tasty and beware, highly addictive.
